Everyone has had Carbonara, but have you actually ever made one at home? It’s literally one of the simplest dishes to make ever! It uses ingredients you will probably have in your house, everyone will enjoy (including children!) and can be cooked in 12 minutes – yes 12 minutes! It’s a quick and easy mid-week dinner that is so simple to make.
I know the traditional recipe uses just egg yolks and NO cream, but I like a little splashy of cream! Feel free to not include any and just use a little pasta water, but I like it in.
Recipe (serves 2)
100g smoked pancetta
1 small onion, chopped
1 clove of garlic, minced
200g spaghetti
2 eggs
2 tbsp double cream
40g Parmesan cheese (with some extra to serve)
A few basil leaves, ripped up
Freshly ground black pepper
Some salt for the pasta water
Bring a large pan of water to the boil and add some salt. When boiling, add in your spaghetti and let cook for 10-12 minutes.
Whilst the spaghetti is cooking, heat up a frying pan and add in the pancetta. Once some fat has released, add in the onion and garlic. Continue to cook until the pancetta is crisp and the onion is very soft. Next, in a bowl whisk together the eggs, cream and Parmesan and season with pepper.
When the spaghetti is cooked, drain it and return to the same pan. Stir in the pancetta and onion mix, followed by the egg mix. Stir well and add in the basil. Serve with more Parmesan on top. Tasty!
