Super Tasty Pea and Mint Soup

Hands down my favourite soup. Packed with flavour, quick, cheap and super easy to make! Perfect for cold, winter lunches and ideal for storing in containers to freeze or store in the fridge for when you want a quick and tasty lunch or a light dinner.

You can add toppings to the soup to make it more fulfilling, such as a poached egg (sounds odd, but served in a shallow bowl it’s delicious!), crispy Parma Ham (peas and ham, perfect combo) or just serve with crunchy, chewy bread when you need something a little more comforting.

Recipe

1 tbsp olive oil

1 white onion, chopped

1 stick of celery, chopped

2 cloves of garlic, crushed

1 chilli (optional), chopped

500g bag of frozen peas

800ml of chicken stock or vegetable stock

Small bunch of fresh mint, chopped or 1 tbsp jarred mint sauce

Salt and black pepper

50ml double cream (optional)

Optional toppings – crispy Parma Ham, poached egg, croutons, double cream

In a large sauce pan, fry the onion and celery in the olive oil until soft and translucent, around 10 minutes. Next, add in the garlic and chilli if using. Cook again for a further 2 minutes.

Add in the hot stock and bring to a boil. Add in the peas, bring to a boil again and cook for 5 minutes. Add in the mint (fresh or jarred), plenty of seasoning (to taste, but use plenty) and then stir well.

Blend the soup well until super, super smooth – it should have a velvety texture.

Taste for seasoning and add more if necessary. Stir in the double cream if using.

Serve with your toppings of choice or just as it is. Delish!

This can be stored in Tupperware in the fridge for up to 5 days or in the freezer.
