This tray-bake dish is great as it’s so tasty, super easy and best of all – everything is cooked on one baking tray, making cleaning up a doddle!
Chicken would also work well instead of the salmon, but I just love how tasty salmon is!
Recipe (serves 2 )
2 salmon fillets, skinless
2 tbsp Mascarpone
Zest of 1 lemon
squeeze of lemon juice
2 tbsp grated Parmesan
1 red chilli, de-seeded and chopped
salt and pepper
4 slices of Parma ham
2 tbsp olive oil
500g of baby or new potatoes
200g green beans
300g cherry tomatoes
Heat up your oven to 180C.
In a bowl, mix together the Mascarpone, lemon zest, lemon juice, Parmesan, chopped chilli and some salt and pepper.
Lay out 2 sheets of parma ham and smear over a tbsp of the cheese mixture. Lay on the salmon fillet and wrap up. Repeat so you have two little salmon parcels.
Heat up a frying pan with 1 tbsp of olive oil and then fry the salmon parcels just enough to crisp up the parma ham. Remove and leave to one side.
Slice the potatoes and put onto a baking tray. Pour over the rest of the olive oil and season well. Toss to coat all the slices. Bake for 20 minutes, give them a shake and turn over, then bake for another 20 minutes.
After 40 minutes, turn the spuds again then tip over the green beans, tomatoes and lay the salmon parcels on top. Bake for another 20 minutes.
When ready to serve, put everything onto a plate and pour over the juices from the tray.
