Thai chicken meatballs in a peanut coconut curry
Delicious weekday curry suitable for all the family!

Using jarred peanut butter and other pantry staples and instead of using chicken breasts/thighs that are a little bit ÂŁÂŁÂŁ for a meal every day, chicken mince makes a delicious alternative! You could also use pork mince that’s even cheaper.
My girls loved this as its sweet and full.of crunchy colourful veg 💚❤🧡
Ingredients
500g chicken mince
2 spring onions, chopped
1 clove garlic, grated
i tbsp ginger, grated
1 tbsp soy sauce
1 tsp brown sugar
1 egg
2 tbsp cornflour
For the curry sauce
1 sliced onion
1 clove of grated garlic
1 tbsp ginger.
1 heaped tbsp red curry paste
1 can coconut milk
200ml chicken stock
1 tbsp each of fish sauce
1 tbsp soy sauce
1 tbsp honey
1 heaped tbsp spoon of crunchy peanut butter
Loads of crunchy veg – I used pepper, mangetout and baby corn
1/2 juice of a lime
to garnish – chopped nuts, red chilli.
How to…
Mix 500g chicken mince with 2 chopped spring onions, 1 clove grated garlic, 1 tbsp grated ginger, 1 tbsp soy sauce, 1 tsp brown sugar, 1 egg and 2 tbsp corn flour. Mix well and roll into golfball sized rounds. You can leave these in the fridge until needed or surprisingly cook straight away!
Heat a good glug of oil in a pan and fry the meatballs on each side until golden brown and crispy. Try not to move too much to.prevent breaking. Once brown, remove and set aside.
In the same pan, fry 1 sliced onion for a few mintues and add 1 clove of grated garlic and 1 tbsp ginger. Add in 1 heaped tbsp red curry paste (or more if you like it spicy). Add in 1 can coconut milk, 200ml chicken stock, 1 tbsp each of fish sauce, soy sauce and honey and then a very good heaped spoon of crunchy peanut butter. Bring to a simmer and add the meatballs back in to cook through and until the sauce thickens (about 10 mins). Add in loads of crunchy veg – I used pepper, mangetout and baby corn – then the juice of 1/2 lime.
I served with rice and topped the adults with cashew nuts (any nut is fine, that’s just what I had) and chopped chilli.
