Italian Meatball Traybake

An EASY all in one dish of meatballs, roasted aubergine, courgette, red onion, peppers and tomatoes with sourdough croutons and mozzerella, lobbed into a baking tray and done in around 40 minutes…amazing!

As you can see, nights are drawing in (bad photo alert 😆) so a little more comfort food is required! I made this up and chucked it in the oven whilst getting Little M ready for bed.

FYI I love using up old bits of bread to make croutons…salad, soups, anything…use it up!

Ingredients

1 can chopped tomatoes

1 tsp mixed Italian dried herbs

2 courgettes

1 aubergine

1 red pepper

1 red onion

Meatballs – male your own (I have a great recipe on my blog) or buy them ready made. Allow 5 small per person, 3-4 large per person

sourdough bread, about 1/4 loaf or any leftover bread

1 ball mozzarella 

1 bunch fresh basil

Salt and pepper

How to…

Pour 1 can chopped tomatoes into a baking tray. Season with salt and pepper and 1 tsp Italian dried herbs. Chop 2 courgettes, 1 aubergine, 1 red pepper and 1 red onion into chunks. Tumble over the tomato mix, then add some raw meatballs (either homemade or bought). Bake in the oven at 200c for 25 mins. After the 25 mins are up, chop up some sourdough or any leftover bread into chunks and sprinkle them over the bake. Then tear over blobs of mozzarella and some fresh basil. Bake again for another 15 minutes. Delicious!
