Mango Peach Salsa

This amazing salsa is super tasty and perfect for those warm summer days and nights! The mix of fresh mango and peach, along with peppers, chilli and tomato makes a perfect combination.

I recently had this in Florida, literally eating it most days (not sorry) and it was just perfect in the warm sunshine.

Try this salsa with a big bowl of nachos (HEAVEN!), along side grilled meats, straight from the bbq or in a corn tortilla with some cajun blackened fish. Absolutely delicious.

Recipe

4 peaches

1 mango

1 wedge of fresh pineapple

3 large, very ripe tomatoes

1 yellow or red pepper

2 red chillies

1 clove of garlic

Juice of 1 lime

1 tbsp tomato puree

2 tbsp olive oil

1 tsp sugar

Salt and pepper

Prepare all your fruit – peel, chop and dice the peaches, mango and pineapple and put into a large bowl.

Chop the tomatoes, pepper, chillies and garlic and mix into the fruit, along with the tomato puree, lime juice, olive oil, sugar and some salt and pepper.

Mix the salsa well and keep in the fridge for at least 30 minutes (it’s better served chilled).

Serve with ANYTHING you want! SO good.
