Quick and easy one pan Cajun chicken and veggies

I recently had a midweek evening to myself and wanted something quick, easy and healthy to eat – so here we go!

This dish is packed with flavour and takes less than 15 minutes to prepare and cook – perfect for a busy evening.

Recipe

1 free range chicken breast

1 red pepper

1 onion

1/2 tbsp olive oil

1/2 tsp cumin

1/2 tsp paprika (smoked or sweet, whatever you fancy)

1/2 tsp oregano

1/2 tsp ground chilli powder or dried chilli flakes

1/4 tsp dried thyme – less is better, it can be quite strong

1/2 tsp sugar

1/2 tsp ground black pepper

Good pinch of salt

juice of 1/2 lime

Fresh parsley or coriander to garnish

Lay a sheet of cling film down on a wooden board and pop the chicken on top. Lay another piece of cling film on top.  Now the fun part, bash the chicken with a rolling pin until flattened and all the same thickness, about 1cm. Great to get your anger out after a long day at work!

In a bowl mix the oil, cumin, paprika, oregano, thyme, sugar, chilli powder, black pepper, salt and lime juice. Rub this mix all over the chicken until well coated. Leave to one side.

Slice the veggies into strips and now we’re ready to cook.

Heat up a griddle pan until very hot. Lay the chicken in the pan and leave to cook for 3 minutes. Turn over and cook again. Keep turning until it’s cooked through and nice and charred.

When the chicken is almost cooked, move to one side and tip in the veggies. Stir until coated in the chicken flavour, oil and spices and leave to cook until the veg is just tender.

Slice the chicken and serve on top of the peppers and onions, then sprinkle some chopped herbs on top.

Serve with a nice dollop of mashed avocado! Perfect meal for me, YUM.
