Crispy Cajun chicken tenders (baked, not fried!)

Amazingly moreish crispy Cajun chicken tenders! Try this super tasty, easy and low fat recipe, I promise you will never buy chicken nuggets again!

These are perfect for party food with a cool garlic mayonnaise to dip, or serve them cuddled together with a beautiful crisp slaw, creamy avocado and hot sauce in a soft taco – amazing! Or just have alone with some sweet chilli sauce as a  Saturday movie night sofa snack!

They are practically guilt free as they are baked in a deliciously spiced bread crumb, not fried! So win win all round! Enjoy.

I have done the recipe with 2 chicken breasts, which will serve 2-3 people, so multiply the recipe as needed!

Recipe

2 chicken breasts 

1 tsp cumin

1 tsp paprika

1 tsp chilli powder

1/2 tsp dried thyme

2 cloves of garlic, crushed

125g dried breadcrumbs, I like using panko breadcrumbs

2 eggs

100g flour

Salt and pepper

Preheat your oven to 180c.

Slice the chicken breasts into chunky strips, enough for 3 bites in 1 strip (chicken tender size) and pop into a bowl. Pour over the cumin, paprika, chilli powder, thyme, garlic and some salt and pepper. Mix well and leave to marinate until needed.

Next, put the flour onto a plate and season, whisk the eggs in a separate bowl and the breadcrumbs into another. Dip each chicken tender into the flour, shaking off any excess, then coat in the egg and then the breadcrumbs. Lay in a single layer on a baking sheet and bake for 25-35 minutes, turning half way, until crisp and brown.

Serve with cold crunchy slaw, creamy avocado and some hot sauce in a soft taco wrap – YUM!
