For some reason I’m loving crab ATM…maybe it’s a pregnancy craving but I’m loving it! Its fresh, cool and ultra tasty for these hot summer days we’re having!

And when you live on a little island surrounded by great seafood, then why not go bananas!

This is soooo good and a totally LIGHT dinner great to bash up quickly 😍


Ingredients (serves 2)

1 pot of fresh white crab meat

1 pot of coldwater prawns

1-2 tbsp creme fraiche

1 lemon

1 tbsp parsley, chopped

1 tbsp chives, chopped

Black pepper and salt

1 avocado

2 tomatoes

2 slices sourdough

Mix the crab meat with the prawns, creme fraiche, juice of half the lemon, the parsley, chives and some black pepper. Mix and leave in the fridge. Chop the avocado and mix with the rest of the lemon juice to stop it browning. Deseed and chop the tomatoes. Season. Toast up the delicious sourdough then pile on the avo, tomatoes and crab mix. YUM!!!!
